Cheesy Mashed Cauliflower Recipe

Cheesy Mashed Cauliflower Recipe

Do you love mashed potato? Use cauliflower to create a light fluffy mash without the gut-wrenching irritable bowel symptoms that may accompany potato.

Ingredients

  • 3 cups cauliflower florets
  • 1 tbsp nutritional yeast flakes
  • 1 tbsp almond butter
  • 1 tsp Celtic sea salt
  • ½ tsp freshly cracked black pepper

  • Pinch nutmeg
  • 1 tbsp almond milk
  • Flat-leaf parsley, to serve

Method


  • Put cauliflower florets in steamer over saucepan of boiling water and steam for 8–10 mins or until soft. Remove from heat and allow to cool slightly then purée in food processor with all remaining ingredients except almond milk until smooth. If mixture is too thick, add almond milk or a little water.
  • Serve warm, garnished with parsley.
