Burrata Salad With Nectarines & Tomatoes

Burrata Salad with Nectarines & Tomatoes

- 1 That’s Amore Burrata
- 3 large nectarines
- 1 handful heirloom tomatoes
- Extra-virgin olive oil
- 2 tsp balsamic vinegar
- Salt & pepper, to taste
- 6 basil leaves
- Remove Burrata cheese from the fridge half an hour before serving and gently drain the water.
- Cut nectarines and tomatoes into halves and place in a bowl, dress with 1 tbsp of olive oil, 2 tsp of balsamic vinegar and salt and pepper, to taste.
- Mix well and put the nectarines and tomatoes in a plate, add basil leaves and finish with Burrata on top.
Farfalle with Zucchini & Stracciatella

Farfalle with Zucchini & Stracciatella

- 2 zucchinis
- 2 garlic cloves, peeled & chopped
- 1 cup fresh basil leaves
- 2 tbsp pine nuts
- Salt & pepper, to taste
- 1 tbsp lemon juice
- Extra-virgin olive oil
- 400g farfalle pasta
- 100g Stracciatella cheese
- Grate the zucchini and squeeze out as much water as possible.
- Add the zucchini, garlic, basil and pine nuts to the food processor.
- Puree until finely minced. Add salt, pepper, lemon juice and 2 tbsp of olive oil. Puree until smooth and creamy. If too thick, add additional olive oil or a little water until thinned out, and set aside. (This will be your zucchini pesto.)
- Bring salted water to the boil. Add pasta and cook as per instruction on packet.
- Once the pasta is cooked, strain and add it into the large bowl with zucchini pesto. Give the pasta a good toss until pesto is evenly spread throughout the pasta. Plate up and finish with a tablespoon of Stracciatella cheese.

- 1 clove garlic, crushed
- Extra-virgin olive oil
- 250g passata sauce
- Salt & pepper, to taste
- 700mL vegetable stock
- 200g risotto rice
- 2tbsp That’s Amore Grated Parmesan
- 2 eggs
- 100g breadcrumbs
- 125g That’s Amore Fior di Latte
- Canola or olive oil, to deep fry
- In a saucepan sauté garlic in olive oil until soft. Add the passata, salt to taste, and leave it to simmer for 15 mins. In the meantime, bring vegetable stock to a boil in a separate saucepan.
- When the sauce is ready, add the rice and cook until it has absorbed most of the passata. Then add a couple of splashes of stock and again wait for the rice to absorb the liquid. Repeat the process, adding a small amount at a time, until the rice is almost ready but a little undercooked. Remove from the heat.
- Season to taste, stir in parmesan and spread over a tray to cool and set.
- Then make the supplì. Once your rice has cooled off, grab two bowls, prepare a bowl of whisked eggs and a bowl of breadcrumbs.
- Slice a That’s Amore Fior di Latte into 12 even strips of mozzarella. These strips will be the cheese used in the centre of your supplì.
- Divide the rice into 12 even portions as well. Grab each portion of rice and press it into your hand so that you get a nice concave bowl shape in your hand. Add mozzarella in the middle and fold the rice around so you have a neat cylinder. Repeat for remaining portions of rice.
- Now one by one dip the supplì in the egg followed by the breadcrumbs, roll it around a little to make sure you get even breadcrumbs all around it.
- You can now start the frying process. Fill a deep pan with canola or olive oil and bring it to 180°C. Add in two supplì at a time and deep fry until golden.
- Serve hot to ensure a nice oozy cheesy centre, enjoy!
