  • 1 That’s Amore Burrata
  • 3 large nectarines
  • 1 handful heirloom tomatoes
  • Extra-virgin olive oil
  • 2 tsp balsamic vinegar
  • Salt & pepper, to taste
  • 6 basil leaves
  1. Remove Burrata cheese from the fridge half an hour before serving and gently drain the water.
  2. Cut nectarines and tomatoes into halves and place in a bowl, dress with 1 tbsp of olive oil, 2 tsp of balsamic vinegar and salt and pepper, to taste.
  3. Mix well and put the nectarines and tomatoes in a plate, add basil leaves and finish with Burrata on top.

  • 2 zucchinis
  • 2 garlic cloves, peeled & chopped
  • 1 cup fresh basil leaves
  • 2 tbsp pine nuts
  • Salt & pepper, to taste
  • 1 tbsp lemon juice
  • Extra-virgin olive oil
  • 400g farfalle pasta
  • 100g Stracciatella cheese
  1. Grate the zucchini and squeeze out as much water as possible.
  2. Add the zucchini, garlic, basil and pine nuts to the food processor.
  3. Puree until finely minced. Add salt, pepper, lemon juice and 2 tbsp of olive oil. Puree until smooth and creamy. If too thick, add additional olive oil or a little water until thinned out, and set aside. (This will be your zucchini pesto.)
  4. Bring salted water to the boil. Add pasta and cook as per instruction on packet.
  5. Once the pasta is cooked, strain and add it into the large bowl with zucchini pesto. Give the pasta a good toss until pesto is evenly spread throughout the pasta. Plate up and finish with a tablespoon of Stracciatella cheese.

  • 1 clove garlic, crushed
  • Extra-virgin olive oil
  • 250g passata sauce
  • Salt & pepper, to taste
  • 700mL vegetable stock
  • 200g risotto rice
  • 2tbsp That’s Amore Grated Parmesan
  • 2 eggs
  • 100g breadcrumbs
  • 125g That’s Amore Fior di Latte
  • Canola or olive oil, to deep fry
  1. In a saucepan sauté garlic in olive oil until soft. Add the passata, salt to taste, and leave it to simmer for 15 mins. In the meantime, bring vegetable stock to a boil in a separate saucepan.
  2. When the sauce is ready, add the rice and cook until it has absorbed most of the passata. Then add a couple of splashes of stock and again wait for the rice to absorb the liquid. Repeat the process, adding a small amount at a time, until the rice is almost ready but a little undercooked. Remove from the heat.
  3. Season to taste, stir in parmesan and spread over a tray to cool and set.
  4. Then make the supplì. Once your rice has cooled off, grab two bowls, prepare a bowl of whisked eggs and a bowl of breadcrumbs.
  5. Slice a That’s Amore Fior di Latte into 12 even strips of mozzarella. These strips will be the cheese used in the centre of your supplì.
  6. Divide the rice into 12 even portions as well. Grab each portion of rice and press it into your hand so that you get a nice concave bowl shape in your hand. Add mozzarella in the middle and fold the rice around so you have a neat cylinder. Repeat for remaining portions of rice.
  7. Now one by one dip the supplì in the egg followed by the breadcrumbs, roll it around a little to make sure you get even breadcrumbs all around it.
  8. You can now start the frying process. Fill a deep pan with canola or olive oil and bring it to 180°C. Add in two supplì at a time and deep fry until golden.
  9. Serve hot to ensure a nice oozy cheesy centre, enjoy!
