Ingredients

  • Marinade
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tbsp Italian herb mix
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 500g tinned sardines

    Savoury Crumb
  • 100g panko crumbs
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp dried basil

Method


  • Preheat the oven to 200ºC and line a large baking tray.
  • Mix all the marinade ingredients together in a bowl and add the sardines.
  • Gently toss to coat and then lay out the sardines in a single layer on the tray.
  • Bake for 15 mins until golden and slightly crispy.
  • Meanwhile, mix the savoury crumb ingredients together and toast in a dry pan (no oil) over medium-high heat until browned and fragrant.
  • Serve the sardines warm with a scatter of savoury crumb for crunch. They’re perfect on toast with a slather of tomato relish.
  • Note: Use the oil from the tins of sardines in the marinade for additional flavour and less wastage.
