Miso Poached Eggs

This is an extremely delicate way to use miso. It certainly doesn’t punch you in the face with flavour — it’s more of a background flavour, but we love them.

Ingredients

Method

  • 2 tbsp white miso
  • Water, enough to ¾ fill a saucepan
  • 1 star anise
  • 2 tbsp apple-cider vinegar
  • 4 eggs
  • Avocado, halved & sliced
  • Grainy bread of choice
  1. Place miso, water, star anise and vinegar in a medium-sized saucepan and bring to a simmer.

  3. Cook for 3 to 4 mins, remove with a slotted spoon and drain well.
  4. Meanwhile, toast the bread.
  5. To serve, top toast with miso-poached eggs and place the avocado on the side.
