The super brassica, kale, is rich in sulphur compounds essential for liver detoxification of carcinogens. Kale also provides high levels of vitamin K needed for healthy bones and blood clotting, and beta-carotene for good vision.

Orange and Avocado Kale Salad Recipe

Ingredients

  • 2 handfuls kale, stems removed & finely chopped
  • Juice & zest 1 lemon
  • 2 tbsp extra-virgin olive oil
  • Pinch sea salt
  • 2 oranges, peeled & diced
  • 1 medium avocado, diced
  • ½ pomegranate, seeds removed
  • Handful mint leaves, roughly chopped
  • 3 tbsp roughly chopped pistachios
  • 2 tbsp pepitas

Method


  • Place kale in large bowl and cover with lemon juice, olive oil and sea salt. Massage kale for 3 mins until leaves are soft.
  • Gently toss through orange pieces, avocado, pomegranate seeds, mint, pistachios and pepitas.
