Pineapple and coconut iceblocks
Pineapple is a great source of bromelain which helps promote a healthy digestive system by breaking down proteins. Bromelain also has an anti-inflammatory action which has been shown to help ease arthritis, sore throats and sinusitis. You will also get a good dose of immune-boosting vitamin C from this delicious fruit which stars in these pineapple and coconut iceblocks.
Makes: 6 iceblocks
- 2 heaped cups diced pineapple
- 2 tbsp lime juice
- 1 cup coconut milk
- Small handful mint
- Place all ingredients in blender or food processor and blend until well combined.
- Pour into iceblock moulds and place in freezer overnight.
