Egg & Dairy-Free Vegan Yorkshire Puddings

Serves: 6

Egg & Dairy-Free Vegan Yorkshire Puddings

Ingredients

Method

  • 6 tsp vegan margarine/butter or sunflower oil
  • ½ cup self-raising flour, sieved
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ cup ORGRAN No Egg Egg Replacer
  • 80mL water
  • 280mL rice milk

  • 2 tbsp garlic powder (optional)
  • 2 tbsp onion powder (optional)
  1. Preheat oven to 220°C.
  2. In 6-hole muffin tray, dollop 1 tsp vegan margarine or sunflower oil into each hole.
  3. In large bowl, combine flour, baking powder and salt. In separate bowl, whisk egg replacer into smooth paste with water then slowly add rice milk.
  4. Place bun tray in oven for 10 mins so it gets very hot.
  5. Now add half the egg replacer liquid to dry flour mix. Whisk to smooth paste then incorporate remaining liquid until you have smooth batter. Mixture will be thicker than a normal Yorkshire pudding batter, but if your whisk can stand up in it, it’s too thick, so add a little more water to thin it down.
  6. Working quickly but carefully, remove muffin tin from oven and spoon batter into each hole; it should sizzle. Return tin to oven immediately and bake for 18–22 mins.

  7. Tip: These Yorkshires are very easy to cook; just make sure your oven is hot enough and you can leave the door shut while they rise.
