Brunch Bowl

Serves: 4

Ingredients

  • Dressing
  • ½ cup Procal Authentic Greek Yoghurt
  • ¼ cup olive oil
  • ¼ cup Dijon mustard
  • 3–4 tbsp honey
  • 2 tbsp lemon juice
  • 2 tbsp white-wine vinegar
  • 1 tsp crushed garlic
  • ½ tsp salt
  • Black pepper, to taste

  • 2 slices haloumi
  • 2 cups cooked quinoa
  • 1½ cups kale, chopped
  • ½ avocado, flesh scooped out
  • 1 poached egg
  1. In small bowl or measuring cup, mix all dressing ingredients and let sit for 20 mins in fridge.
  2. Grill haloumi slices in pan.
  3. Add salad ingredients to bowl, top with haloumi, drizzle over dressing and serve.

Mango Smoothie

  • 1½ cup frozen mango cheeks, diced
  • 1 cup mango juice
  • ½ cup Procal Authentic Greek Yoghurt
  • ½ cup ice
  • ½ cup milk
  • 1 tbsp honey
  1. Add all ingredients to blender and puree.
  2. Pour into glasses and serve.

  • 1¾ cups self-raising flour
  • ⅔ cup caster sugar
  • 100g white chocolate, chopped
  • 1 egg, beaten
  • ½ cup Procal Light Sour Cream
  • ⅓ cup milk
  • 100g butter, melted
  • 1 cup fresh or frozen raspberries
  1. Preheat oven to 200ºC. Line 8-cup muffin pan with large muffin cases.
  2. Sift flour into large mixing bowl. Stir in sugar and chopped white chocolate.
  3. Whisk together egg, sour cream, milk and melted butter, add to flour mixture and stir until just combined. Gently fold in raspberries.
  4. Spoon mixture evenly into muffin cases and bake for 25–30 mins until golden and just firm in centre.
