Ingredients

  • 25 lemon leaves
  • 4 strips That’s Amore Buffalo Mozzarella, each cut into 6 large pieces
  • 1 roti bread

  • Coriander Relish
  • 100g coriander, roughly chopped
  • 100g rocket
  • 2 garlic cloves, peeled
  • 10g pine nuts
  • 100mL extra-virgin olive oil
  • Salt & pepper, to taste
  • Lemon juice, to taste

Method


  • Wash lemon leaves thoroughly and remove stalks. Wrap each mozzarella piece with a leaf and secure with skewer.
  • To make relish, blend coriander, rocket, garlic and pine nuts with olive oil using highest speed on blender or food processor for 1 min. Use spatula to combine and scrape down sides, then blend again. Ensure all combined but not too fine. Season with salt, pepper and lemon juice.
  • Chargrill roti and cut into pieces.
  • Chargrill mozzarella lemon leaf wraps to melting point.
  • To serve, spoon relish on plate and place mozzarella on top.
  • Serve with roti.
