Watermelon, Feta, Dill & Cucumber Salad

This combination of fruit and veggies is an absolute delight to eat. The creaminess of the cheese makes it a filling summer meal.

Ingredients

  • 800g watermelon, cubed
  • 5 baby cucumbers, sliced lengthwise (approx. 2cm thick)
  • 1 red onion, sliced
  • 300g marinated feta or goat’s cheese, oil reserved for dressing
  • 4 sprigs dill, fronds picked
  • 2 tbsp red-wine vinegar
  • Salt & pepper, to taste

Method


  • Place the watermelon, cucumbers, onion and cheese on a platter and scatter the dill on top.
  • Combine the oil from the cheese, vinegar, salt and pepper in a small bowl or jar and drizzle over the salad.
  • Tip: Use soft, creamy goat’s cheese or feta for a contrasting texture.
