Beetroot and Flaxseed Hummus Recipe

Hummus is such a great food and so easy to make. This Healthy Vegan Beetroot and Flaxseed Hummus Recipe is both colourful and delicious.

Ingredients

  • 2 garlic cloves, peeled
  • ¼ cup tahini
  • ½ cup lemon juice
  • 1 tbsp salt
  • 2 cups water
  • 3 cups cooked chickpeas
  • ½ cup flax meal
  • 1 cup grated beetroot

  • Toppings
  • Sunflower sprouts, pistachios & cashew sour cream (recipe below)

  • Cashew Sour Cream
  • 1 cup cashew nuts, soaked for 15 mins in just-boiled water, then drained
  • 1 cup water
  • Juice 1 lemon
  • 1 tsp salt

Method


  • To make hummus, add all ingredients except water to food processor. Puree and slowly add the 2 cups water. Process until smooth.
  • Blend all Cashew Sour Cream ingredients in high-speed blender until smooth. Use Cashew Sour Cream as topping along with sunflower sprouts and pistachios.
  • Serve immediately.
