Cauliflower, Spinach and Red Lentil Dhal Recipe

Dhal is a simple and comforting meal that, once you’ve mastered the basics, is yours to experiment with. It’s a great dish to enjoy the benefits of turmeric.

Ingredients

  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp fennel seeds
  • 1 tsp ground coriander
  • 3 tsp curry powder
  • 1 cup tomato puree
  • 2 cups uncooked red lentils
  • 1 cinnamon stick
  • ½ cauliflower, grated
  • Salt
  • 1 tsp garam masala
  • 4 silverbeet leaves, shredded
  • 2 cups cooked brown rice & mango chutney, to serve

Method


  • Heat saucepan on high heat. Add spices except garam masala and dry-roast for around 30 secs, until fragrant.
  • Add tomato puree and stir well.
  • Add two cups of uncooked red lentils and four cups of water and stir.
  • Add cinnamon stick and grated cauliflower.
  • Cover with lid and bring to boil. Reduce heat to simmer and continue to cook until lentils are soft. Add another cup of water if required. Stir from time to time while lentils are cooking.
  • When lentils are soft, add salt to taste. Add garam masala and stir, followed by spinach.
  • Serve with cooked brown rice and mango chutney.
