Coleslaw Salad with Cashew Mayonnaise Recipe

Coleslaw is a timeless favourite that goes with any dish and always delights. Try this yummy salad at your next picnic.

Ingredients

  • Cashew Mayonnaise
  • 1½ cups cashews (soaked overnight & drained)
  • 1 cup water
  • 2 tbsp apple-cider vinegar
  • 1 clove garlic
  • 1 tbsp Dijon mustard
  • 1 tbsp curry powder
  • Salt & pepper, to taste

  • 2 carrots, grated
  • 1 onion, sliced
  • ½ green cabbage, shredded
  • 1 cup raisins
  • Handful parsley, chopped

Method


  • To make cashew mayonnaise, place all ingredients in blender and blend to smooth consistency.
  • To make coleslaw, add remaining ingredients to salad bowl. Drizzle cashew mayonnaise on top and serve.
