Pineapple and coconut IceBlocks

Pineapple is a great source of bromelain which helps promote a healthy digestive system by breaking down proteins. Bromelain also has an anti-inflammatory action which has been shown to help ease arthritis, sore throats and sinusitis. You will also get a good dose of immune-boosting vitamin C from this delicious fruit which stars in these pineapple and coconut iceblocks.

Ingredients

  • 2 heaped cups diced pineapple
  • 2 tbsp lime juice
  • 1 cup coconut milk
  • Small handful mint

Method


  • Place all ingredients in blender or food processor and blend until well combined.
  • Pour into iceblock moulds and place in freezer overnight.
