Raw Carrot Noodle Salad with Pesto Dressing Recipe

Spiralisers are a fabulous, inexpensive and exciting tool that takes simple ingredients such as carrot, zucchini and beetroot to a whole new dimension. Raw pastas made from these vegetables can be so adaptable and, when topped with a sensational sauce, make fun raw dinners for everyone.

Ingredients

  • Pesto Dressing
  • 1 cup basil leaves
  • ½ cup parsley
  • 2 cloves garlic
  • 2 tbsp nutritional yeast
  • ¼ cup cashew nuts
  • Juice ½ lemon
  • ½ avocado
  • Salt, to taste

  • 1 carrot, spiralised or peeled into noodles
  • ¼ head broccoli, divided into florets
  • 2 Lebanese cucumbers, diced
  • 1 celery stick, diced
  • 1 red capsicum, diced
  • ½ avocado, chopped
  • 1 cup sun-dried tomatoes
  • Few basil leaves, to serve

Method


  • To make pesto dressing, place all ingredients in blender and blend.
  • Place carrot spirals, broccoli, cucumber, celery, capsicum, avocado and sun-dried tomatoes in bowl.
  • Toss salad, drizzle over pesto and top with basil leaves and serve.
