Banana & Muesli Protein Bread

Banana & Muesli protein bread 

Makes: 1 loaf 

Ingredients: 

  • 2 large bananas (1 cup + 1/3 cup mashed)
  • 2 tbsp coconut oil
  • 3 tbsp sweetener of choice
  • 1 tbsp vanilla extract
  • 1 tsp apple cider vinegar
  • 2 flax eggs (2 tbsp flax meal
  • + 6 tbsp water, combined)
  • 1 tbsp coconut cream
  • 1 cup chickpea, buckwheat, oat or almond flour
  • ½ cup protein powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup Brookfarm Natural Muesli Macadamia Cranberry

Method:

  1. Preheat oven to 175°C and grease and line a loaf tin. Combine the dry ingredients (except the muesli) in one bowl and the wet ingredients in another bowl.
  2. Stir the wet ingredients into the dry, then fold in muesli and mix until just combined.
  3. Pour the batter into the loaf tin and top with a little extra muesli.
  4. Bake for 40 mins or until a toothpick comes out clean.
  5. Allow to cool in the tin for 5 mins before taking it out to cool completely, then serve.
