Tomato Salsa

A fresh, smoky tomato salsa with dried chillies, garlic, lime and coriander — perfect for spicing up any meal.

Ingredients

  • 2 1⁄3 cups cherry tomatoes (or any ripe & tasty tomatoes)
  • ½ red onion, diced
  • 2 tbsp coriander, finely chopped
  • 1 dried smoked chilli (ancho, pasilla, mulato, guajillo — use a mix for balanced flavour & colour)
  • 1 garlic clove, crushed
  • Juice ½ lime
  • Sea salt, to taste

Method


  • Soak the dried chilli in hot water for 10 mins then chop.
  • Mix all ingredients together and allow to infuse.
  • Add 2 pinches of salt just before serving.
