Make your own crumpets
You’ll need crumpet or food rings. Egg rings can work but low sides may cause sticking. Small springform tins are a great alternative.

Ingredients
- 240mL warm water
- 1 pack instant yeast
- 1 tsp sugar
- 180g plain flour
- ½ tsp salt
- 1 tsp baking powder
- 1 tsp olive oil
- 1 tsp very soft butter
Method
- Combine water, yeast and sugar in a bowl. Set aside for 8 mins until frothy.
- In another bowl, mix fl our, salt and baking powder. Add yeast mixture and beat on low speed with a hand mixer for 45 secs.
- Scrape down the sides and beat another 45 secs. Cover with a towel and let rise in a warm spot for 45 mins.
- Preheat your pan over medium-low heat.
- Mix olive oil and butter and use a basting brush to coat the inside of your rings.
- Place the greased rings in the pan and fi ll them ¼ full with batter.
- Cook for around 5 mins until craters appear. Use a knife to pop any unformed bubbles.
- Once set in the middle and cooked at the edges, remove rings and flip. Cook for 1 more min.
- Cool on a wire rack. Toast and top to your heart’s content!
- Tip: If your house isn’t warm enough to prove the batter, pop it in a low oven. If it gets too warm, wedge the door open with a wooden spoon.
