Ingredients

  • 2 tbsp olive oil
  • 1 brown onion, finely chopped
  • 400g mushrooms, finely sliced
  • 3 tsp minced garlic
  • 1½ cups cooked brown rice
  • 1½ cups quick oats
  • 2 tbsp Niulife Organic Smokey BBQ Extra Thick Coconut Amino Sauce
  • 1 tsp salt
  • ½ tsp black pepper

Method


  • Sauté brown onion in olive oil for approx. 5 mins.
  • Add mushrooms, increase heat and cook for 10 mins, stirring frequently.
  • Add garlic, rice and oats. Cook for a further 5 mins.
  • Add Niulife Smokey BBQ Extra Thick Coconut Amino Sauce, salt and pepper. Mix and simmer for 1-2 mins.
  • Transfer to a blender or food processor and pulse until all ingredients have combined, retaining a slightly chunky texture.
  • Transfer to the fridge for 15-20 mins and preheat oven to 190°C.
  • Arrange into small balls (it is easiest to use your hands) and place a lined baking tray.
  • Bake for 10 mins, turn over and cook for a further 8 mins.
  • Finish by lightly frying if you’d like to create a slightly crispy texture.
  • Serve with extra Niulife Smokey BBQ Extra Thick Coconut Amino Sauce or tomato salsa.
