Tomato Salsa
A fresh, smoky tomato salsa with dried chillies, garlic, lime and coriander — perfect for spicing up any meal.

Ingredients
- 2 1⁄3 cups cherry tomatoes (or any ripe & tasty tomatoes)
- ½ red onion, diced
- 2 tbsp coriander, finely chopped
- 1 dried smoked chilli (ancho, pasilla, mulato, guajillo — use a mix for balanced flavour & colour)
- 1 garlic clove, crushed
- Juice ½ lime
- Sea salt, to taste
Method
- Soak the dried chilli in hot water for 10 mins then chop.
- Mix all ingredients together and allow to infuse.
- Add 2 pinches of salt just before serving.
