Mushroom & Prosciutto Pizza

Meaty textures from the mushrooms provide a great topping option as well as lots of flavour bursting from the pesto and prosciutto — and to top it off, the added nutrition of spinach and sprouts.

Ingredients

  • 2 x ready-made pizza bases
  • 150g roast capsicum pesto dip
  • 100g mixed mushrooms
  • (shiitake, Swiss browns & oyster), sliced
  • 60g brie
  • 2 slices prosciutto
  • Handful spinach
  • Handful bean sprouts

Method


  • Preheat oven to 200°C.
  • Place pizza bases on baking paper and spread a thin layer of pesto dip over the bases.
  • Top with mushrooms, brie and prosciutto.
  • Bake the pizzas for 15 mins. Cook for a further 5 mins if needed or until the base is crispy and golden around the edges and toppings are golden and cooked.
  • Top with spinach and bean sprouts and slice pizza into 8 slices.
  • Serve immediately.
