Ginger Pear Pan Pudding
This ginger pear pan pudding is a delicious, quick and easy-to-make dessert that my ginger-loving family adores. Ginger and pear are a perfect match of sweetness and spice, and I do love a scoop of creaminess on top!

Ingredients
- 115g butter
- 75g rapadura sugar
- 120mL milk of choice
- 1 tsp vanilla essence or paste
- 3 tsp ground ginger
- ½ tsp sea salt
- 1 tsp baking powder
- 130g wholemeal spelt flour
- 1 pear, cored & sliced thinly
- 1 tbsp maple syrup
Method
- Preheat the oven to 180°C (fan-forced).
- Place the butter in a medium-size non-stick or cast-iron pan (approx. 22cm) over a low heat to melt. If your pan cannot go in the oven, tip the melted butter into a medium-sized baking dish and tip to coat the bottom and sides a little.
- In a mixing bowl whisk the rapadura, milk, vanilla, ginger, sea salt and baking powder until well combined. Pour in the melted butter and whisk some more.
- Fold in the flour gently until just combined.
- Place the batter back in the pan that you melted the butter in or the baking dish. Top with the pear and drizzle over the maple syrup.
- Cook in the oven for 20 mins.
- You can slice or spoon out of the pan.
- Tip: Make it dairy-free by replacing the butter with coconut oil and the milk with a plant-based milk.
