- 1 tin Global Organics No Salt Chickpeas
- 1⁄3 cup tahini paste of your choice
- 8 roasted garlic cloves (or 1-3 fresh garlic cloves if you prefer a stronger, sharper flavour)
- ¼ cup freshly squeezed lemon juice
- 1 tbsp Global Organics Extra-Virgin Olive Oil, plus extra for garnish
- 1⁄3 tsp Lotus Celtic Sea Salt
- ¾ tsp ground cumin
- Pinch cayenne pepper (optional)
- Paprika powder & parsley leaves for garnish
Method
- Drain and rinse canned chickpeas. Reserve approx. 15-20 whole chickpeas for garnish.
- Place chickpeas, tahini paste, garlic, lemon juice, olive oil, salt, cumin and cayenne pepper in a food processor. Blend the mixture until it becomes a smooth, creamy paste.
- Taste the mixture and add more salt, lemon juice or garlic to suit your own taste. Process again to blend any additional ingredients. If the texture seems too thick, add lukewarm water and continue to process until desired consistency is reached.
- Transfer hummus to a shallow bowl and create a well in the centre with a spoon. Garnish with reserved whole chickpeas, a drizzle of olive oil and a sprinkle of paprika and parsley leaves.
