Crunchy Maple Asian-Inspired Salad with Miso Dressing

Ingredients

  • 2 cups kale
  • 2 cups shredded green cabbage
  • ½ cup diced cucumber
  • ½ cup shredded carrots
  • ½ cup thinly sliced capsicums
  • ¼ cup thinly sliced spring onions
  • 1 cup coarsely chopped cashews
  • 4 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice-wine vinegar
  • ½ lime juice
  • 2 tbsp pure maple syrup
  • 2 tsp miso paste
  • ½ tsp finely grated ginger

Method


  • Combine the kale, cabbage, cucumber, carrots, capsicums and spring onions.
  • Make the dressing by combining the olive oil, soy sauce, sesame oil, rice-wine vinegar, lime juice and maple syrup.
  • Add the miso paste and ginger. Whisk until well combined and there are no clumps. Alternatively, use a blender.
  • Shake the dressing when you are ready to serve to combine it again if it has separated. Drizzle about ¾ of it on the salad and toss. Add ¾ cup of the cashews. Add remaining dressing if needed and toss again.
  • Garnish with remaining ¼ cup cashews.
