Ingredients
- 1 cup gluten-free plain flour
- 1/2 lemon wedge, to serve
- 2 tsp baking powder
- Honey or maple syrup, to serve
- 1 tsp cinnamon
- 1 cup Brancourts Lactose Free Cottage Cheese
- 3 large eggs
- 2 tbsp unsweetened plant milk
- 2 tbsp melted coconut oil
- 1 tbsp raw honey
- 1 tsp vanilla bean extract
Method
- In a large bowl, whisk together flour, baking powder and cinnamon until well combined.
- In a blender, add Brancourts Lactose Free Cottage Cheese, eggs, plant milk, coconut oil, raw honey and vanilla bean extract. Blend until smooth and creamy.
- Pour blended mixture into dry ingredients and gently stir until just combined.
- Heat a skillet over medium heat. Scoop portions of batter into pan, cooking until edges appear dry and bubbles form on the surface.
- Flip pancakes and cook for another 1-2 mins or until golden brown and cooked through.
- Stack pancakes to keep them warm. Drizzle with raw honey or maple syrup and serve with favourite toppings.
