Ingredients

  • 1 tbsp olive oil
  • 1 tbsp grated fresh ginger
  • 5 garlic cloves, finely chopped
  • 1 bay leaf
  • 1 shallot, finely diced
  • 2 tbsp finely chopped lemongrass, use tender base only
  • 3 tsp Sri Lankan or regular curry powder
  • ½ cup raw cashews
  • Pinch sea salt & black pepper
  • 400g tin coconut milk
  • 400g tin chickpeas, drained & rinsed
  • Handful baby spinach
  • Handful fresh coriander, finely chopped
  • 1 lime, cut into wedges

Method


  • Heat the olive oil in a large saucepan over medium heat. Add the ginger, garlic, bay leaf, shallot and lemongrass and sauté for 2–3 mins until softened and lightly golden.
  • Stir in the curry powder, cashews, sea salt and pepper, and cook for another 2–3 mins to toast the spices and nuts.
  • Pour in the coconut milk, stir in the chickpeas and add a little water if needed. Bring to a gentle simmer and cook for 20 mins.
  • Add the spinach, cover and cook for a further 2–3 mins.
  • Remove from the heat, stir through the fresh coriander and a squeeze of lime juice, then serve with lime wedges.
