Rocket & Macadamia Pesto with Gnocchi

Ingredients

Method

  • ½ cup macadamias
  • 1 clove garlic, crushed
  • ½ tsp coarse sea salt
  • 60g baby rocket
  • 2 tbsp extra-virgin olive oil
  • Zest 1 lemon
  • 1 tbsp lemon juice
  • 1 × 500g packet Grand Italian Ricotta & Spinach Gnocchi
  1. Place macadamias, garlic and sea salt in mortar and pestle and pound gently until macadamias are broken down into coarse crumble. Gradually add rocket and olive oil, continuing to pound. Add lemon zest and juice, check seasoning and add a further pinch of sea salt if needed.
  2. Cook Grand Italian Ricotta & Spinach Gnocchi according to packet instructions and stir through pesto.
  3. Keep any remaining pesto in a sealed jar in fridge for up to 7 days

Tip: This pesto is made using a mortar and pestle as it creates a chunky texture, but you can use a food processor to make it a speedier process.

Method

  • 50mL extra-virgin olive oil
  • 1 small fennel bulb, chopped
  • 2 ripe tomatoes, chopped
  • 100mL white wine
  • 2 threads saffron
  • 20 prawns, unshelled
  • ½ bunch parsley, chopped
  • 1 × 500g packet Grand Italian Potato Gnocchi
  • 100g That’s Amore Ricotta Salata
  1. Heat oil in large non-stick frying pan over high heat. Add fennel and tomato and cook until soft. Deglaze with white wine. Add saffron, prawns and parsley, and cook until prawns are pink and cooked through, about 2 mins. Set aside.
  2. Cook Grand Italian Potato Gnocchi according to packet instructions and toss in pan with tomato.
  3. Serve with shaved ricotta salata.

Method

  • 50mL olive oil
  • 1 large onion
  • 2 cloves garlic
  • 2 × 400g cans crushed tomatoes
  • Fresh basil
  • Salt & pepper
  • 1 chilli, optional
  • 1 × 500g packet Grand Italian Pumpkin Gnocchi
  • 1 That’s Amore Cheese buffalo mozzarella, grated or shredded
  1. In large saucepan heat olive oil and fry onion and garlic until brown. Add tomatoes, basil, salt, pepper and chilli.
  2. Cover and simmer slowly for at least 45 mins.
  3. Cook Grand Italian Pumpkin Gnocchi according to packet instructions and carefully toss in sauce and sprinkle buffalo mozzarella on top.
