Gnocchi & Spiced Chicken Tray Bake

Ingredients

  • 1 tbsp paprika
  • 100g fetta, crumbled
  • 1 tbsp dried oregano
  • Handful baby spinach leaves
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp garlic granules
  • 1kg chicken thigh fillets
  • Olive oil spray
  • 2 red onions, cut into eighths
  • 1 red capsicum, cut into 2cm pieces
  • 1 yellow capsicum, cut into 2cm pieces
  • 1 cup Sicilian green olives
  • Salt & pepper, to taste

Method


  • Combine the herbs and spices in a bowl, add the chicken and toss to coat well.
  • Spray a large shallow baking dish with oil, then add the chicken to the pan with the onions, capsicums and olives. Spray again with oil.
  • Bake the chicken at 180°C for 15 mins, then add the gnocchi pieces to the pan. Spray the gnocchi with oil and bake a further 30 mins. Season to taste.
  • Sprinkle over the fetta and spinach. Serve immediately.
