Gluten-Free Banana & Walnut Bread

This banana bread makes a delicious and nutritious brunch. Bananas are rich in potassium, which supports heart health and helps regulate blood pressure.

Ingredients

  • 3 medium ripe bananas, plus 1 extra for topping
  • 3 organic eggs
  • 2 tbsp raw honey or pure maple syrup, plus extra for topping
  • 1 tsp vanilla extract
  • ¼ cup cold-pressed coconut oil
  • 2 tsp baking powder
  • 2 cups almond meal
  • ¼ cup chia seeds
  • ½ cup walnuts, roughly chopped

Method


  • Preheat oven to 160°C and line a baking tin with baking paper.
  • In a food processor, blend the banana, eggs, honey, vanilla, coconut oil and baking powder until smooth.
  • Transfer the mixture to a large bowl, then stir in the almond meal and chia seeds until well combined. Gently fold through the walnuts.
  • Spoon the batter into the prepared baking tin, smoothing the top.
  • Slice the remaining banana lengthwise and arrange the halves on top. Drizzle with honey for a caramelised finish.
  • Bake for 60–70 mins or until a skewer inserted into the centre comes out clean.
  • Remove from the oven and allow the loaf to cool in the tin before carefully lifting it out.
  • TIP:To quickly ripen a banana, place it in a brown paper bag with a apple at room temperature. Refrigerate only ripe bananas, as the cold slows the ripening process.
