Garlic & Chilli Prawn Pasta

Ingredients

Method

  • 1 packet of Herman Brot® Lower Carb Pasta
  • 1 tbsp extra-virgin olive oil
  • 4 cloves garlic, sliced
  • 5g fresh red chilli
  • 15 fresh king prawns
  • 2 tbsp tomato puree
  • 1 tbsp lemon juice
  • 20g fresh parsley
  • Salt & pepper, to taste
  1. Cook pasta in boiling water for 10 mins.
  2. Heat oil in non-stick frypan, cook garlic and chilli for 2 mins, then add prawns and stir-fry for 3 mins until cooked.
  3. Add the tomato puree, lemon juice, cooked pasta, parsley, salt and pepper to pan, stir through and serve.

  • 1 bag Herman Brot® Lower Carb Pasta
  • 1 medium avocado
  • ½ cup fresh basil
  • 2 tbsp freshly squeezed lemon juice
  • 2 cloves fresh garlic, minced
  • Salt & pepper, to taste
  • 1/3 cup olive oil
  • 1 cup fresh broccoli florets
  • 1 cup red capsicum, thinly sliced
  • 1 cup sliced button mushrooms, thinly sliced
  • 1 cup snow peas, sliced
  1. Cook pasta in boiling water for 10 mins.
  2. Combine avocado, basil, lemon juice and garlic in food processor. Season to taste. While food processor is running, add olive oil in slow stream until emulsified.
  3. Blanch broccoli florets in boiling water for 2 mins.
  4. Drain pasta and in a large bowl, combine pasta, avocado sauce, red capsicum, snow peas, button mushrooms and broccoli florets.

Method

  • 3 large red onions, thinly sliced
  • 1 tbsp olive oil
  • Olive oil cooking spray
  • 4 x 100g trim lamb leg steaks
  • Salt & pepper, to taste
  • 4 Herman Burger Protein Buns
  • 2 tbsp low-fat hummus
  • 40g baby spinach leaves
  • 2 tomatoes, sliced
  • 225g tin beetroot slices, drained
  1. Combine onions and oil in a microwave-safe bowl. Cover and microwave on high for 3 mins to soften.
  2. Preheat BBQ grill or grill plate to medium-high. Cook onions on grill plate/BBQ for 5 mins until browned and soft. Cover and keep warm.
  3. Spray both sides of lamb steaks with oil and season. Cook on BBQ/grill plate for 3 mins each side. Cover and keep warm.
  4. Lightly toast Herman Burger Protein Buns (if desired) and spread with hummus. Layer with spinach, tomatoes, beetroot, steaks and onion. Serve with side salad or fries.
