Coconut & Mango Riceberry Rice Pudding

3 Thai riceberry recipes that are perfect for dinner parties

Have you ever tasted Thailand’s purple rice? It’s called riceberry rice and it’s a cross between Hom Nin (non-glutinous black rice) and the fragrant Thai Hom Mali rice. The delicious riceberry rice is rich in antioxidants such as beta-carotene, gamma oryzanol, vitamin E, zinc and folic acid. It is also high in fibre, which aids digestion and slows down the effects of ageing. Riceberry rice is a favourite among those looking for a healthier alternative to regular rice.
