Lemon and cranberry green beans
At Christmastime I love to cook dishes that are full of Christmas colours; this dish is the perfect example. The bright green beans and cranberries will add lovely Christmas colours to your buffet.
- 200g green beans, topped & tailed
- 3 tbsp water
- 2 tbsp butter
- Pinch sea salt & pepper
- Zest 1 lemon
- ¼ cup dried cranberries
- 2 tbs slivered almonds
- Place beans along with water and butter to large frying pan. Cook over medium heat for 2 mins, until beans are just cooked through and are bright green.
- Toss through salt, pepper, lemon zest, cranberries and slivered almonds and cook for 1 min.
- Serve on a platter, topped with some lemon zest and slivered almond.
