  • 200mL sunflower oil
  • 100g flour
  • 100g paprika
  • ½ white onion, peeled & sliced to 1cm thick rings
  • 50ml almond milk
  • 1 roasted tomato
  • ½ roasted red capsicum
  • 4 jalapeños
  • 1 coriander root, chopped
  • 1 red onion, chopped
  • 100g chopped coriander leaves
  • Juice 1 lime
  • 240mL sunflower seed oil
  • 120mL unsweetened soy milk
  • 80g minced garlic
  • 20g capers, chopped
  • 1 bunch dill, chopped
  • 1 potato bun or burger bun, 1 Quorn Battered Fish Free Fillets, 1 slice vegan Swiss cheese
  • 2 baby gem lettuce leaves
  1. To make paprika-dusted onion rings, heat oil in frying pan or deep fryer to 185˚C. In mixing bowl combine flour, paprika and salt.
  2. Dip onion in almond milk, dust in flour and fry until crispy.
  3. Preheat oven to 230˚C.
  4. To make tomato and jalapeño salsa, char tomato and capsicum over flame until skin is black. Wrap in aluminium foil and place in oven for 5–10 mins until soft.
  5. In blender blitz tomato, capsicum, jalapeños and coriander root and season with salt.
  6. Remove to bowl and add chopped onion, coriander leaves and lime juice.
  7. To make vegan garlic aioli, combine sunflower seed oil, soy milk, Indian black salt and minced garlic. Blend with stick blender and mix to consistency of mayonnaise. Add chopped capers and dill.
  8. Preheat oven to 220˚C.
  9. To build burger, lightly toast bun under grill. Cook Quorn Battered Fish Free Fillet in oven until golden, or approx. 24 mins. Place cheese on top to melt.
  10. On bottom half of bun place 1 tbsp of salsa, place fish on top and add lettuce. Dollop on good amount of aioli and add onion rings on top.

  • Mayonnaise
  • 240mL sunflower seed oil
  • 120mL unsweetened soy milk
  • 100g chipotles, puréed
  • Pinch Indian black salt
  • Small handful chopped chives
  • Burger
  • 1 Quorn Vegan Gourmet Burger
  • 2 slices vegan American cheese
  • 1 potato bun or burger bun
  • 1 ripe tomato, sliced
  • 2 baby gem lettuce leaves
  • 100mL vegan American chipotle mayonnaise
  1. To make mayonnaise, combine sunflower seed oil, soy milk, chipotle and black salt. Blend with a stick blender and mix to a mayonnaise consistency. Add chives and set aside.
  2. In frying pan, cook Quorn burger slowly, turning repeatedly for 10–12 mins until cooked and hot. Once hot, place slice of vegan cheese on top so that it warms though and begins to melt.
  3. To build burger, cut bun in half and toast lightly.
  4. Place Quorn burger on bun with tomato and lettuce.
  5. Squeeze generous amount of chipotle mayonnaise on top and serve.
