Spinach and Endive Salad with Mandarins and Coriander-Crusted Scallops

Serves: 4

Ingredients

Method

  • Mandarin Vinaigrette
  • 2 tbsp extra-virgin olive oil
  • Lemon zest, to taste
  • 3 tbsp mandarin juice
  • 4 tsp white-wine vinegar
  • 1 tbsp shallots, minced or very thinly sliced
  • Chopped fresh herbs
  • 1 tsp coarse Dijon mustard
  • Pinch salt & pepper

  • Salad
  • 5 cups torn endive
  • 5 cups baby spinach
  • 2 mandarins
  • 2 tsp coriander seeds
  • Good pinch salt & pepper
  • 500g scallops, patted dry
  • 1 tbsp extra-virgin olive oil
  1. To make vinaigrette, release juice from mandarin by rolling it under palm of hand, then peel and squeeze. Whisk all ingredients in medium-sized bowl and set aside.
  2. Combine salad leaves and mandarin segments.
  3. Pound coriander seed in mortar and pestle with salt and pepper, and sprinkle over scallops.
  4. Heat extra-virgin olive oil in large frying pan over medium heat. Add scallops and cook until they form golden crust and are just opaque (2 mins each side).
  5. Serve scallops on salad. Add vinaigrette and toss.

Mandarin Duck Salad

  • 200g sugar snap peas
  • 2 duck breasts
  • 2 mandarins
  • 1 red lettuce
  • ½ punnet blueberries
  • ½ cup slivered almonds

  • Dressing
  • 2 cloves garlic, crushed
  • 1 tbsp Dijon mustard
  • 2 tbsp mandarin juice
  • 2 tbsp extra-virgin olive oil
  1. Preheat oven to 180°C.
  2. Steam or microwave peas until just tender and drain. Rinse under cold water, drain then set aside.
  3. Score fatty side of duck breast. Cook fat-side down in ovenproof frying pan for 4 mins, then turn and cook for further 2 mins. Transfer to oven and bake for 6 mins.
  4. Slice breast with serrated knife. Place in large bowl with peas, mandarin, lettuce leaves, blueberries and almonds.
  5. Combine dressing ingredients in jar and shake well. Pour dressing over salad and toss gently to combine.

Tea-Scented Mandarin Pistachio Yoghurt Snack

  • 2 cups mandarin segments
  • ½ cup hot English Breakfast or any black tea
  • Yoghurt
  • 2 tbsp honey
  • 2 tsp ground cardamom
  • 2 tbsp pistachios
  1. Place mandarin segments in small bowl and dollop yoghurt on top.
  2. Pour tea over, drizzle with honey and sprinkle with cardamom. Leave to steep for few mins.
  3. Add pistachios and serve warm.
