Avocado Fusilli

Serves: 2-3

Ingredients

Method

  • 120g uncooked fusilli

  • Sauce
  • 1 garlic clove, crushed
  • ½ cup cashew nuts
  • 6 fresh basil leaves
  • 1 avocado, pitted & peeled
  • 2 tbsp olive oil
  • Juice ½ lemon
  • 1 tsp Pearl River Bridge Superior Light Soy Sauce
  1. Cook fusilli according to package then drain well.
  2. In food processor, blend garlic, cashew nuts, basil leaves and olive oil until well combined.
  3. In bowl, mash avocado with fork.
  4. Stir in cashew-basil mixture, lemon juice and PRB superior Light Soy Sauce.
  5. Add mixed sauce to fusilli, toss to coat then serve.

Chinese Sticky Rice with Shiitake Mushroom and Peanut

Serves: 4-8

Method

  • Rice
  • 3 cups glutinous uncooked rice
  • 2 tbsp Pearl River Bridge Premium Oyster Flavoured Sauce
  • 2 tbsp Pearl River Bridge Superior Light Soy Sauce
  • 1 tbsp sesame oil
  • 1½ cups water

  • 2 tbsp sesame oil
  • ½ cup sliced shallots
  • ½ cup peanuts
  • 5–6 dried shiitake mushrooms, soaked & sliced
  • 250g pork tenderloin, sliced
  • 1 tbsp dried shrimp, soaked & drained
  • 1 tsp white pepper
  • 1 tbsp Pearl River Bridge Premium Oyster Flavoured Sauce
  1. Wash and drain rice and place in rice cooker.
  2. Add Pearl River Bridge Premium Oyster Flavoured Sauce, Pearl River Bridge Superior Light Soy Sauce, sesame oil and water to rice cooker.
  3. Soak rice for 30–60 mins then cook with white rice program.
  4. Heat sesame oil in pan and brown shallots.
  5. Add rest of ingredients and cook on medium-high heat until pork is thoroughly cooked.
  6. Pour rice into pan, gently mix over low heat then serve hot.

Honey & Soy Glazed Salmon Fillets

Serves: 2

Method

  • 2 × 170g salmon fillets
  • 2 tsp olive oil
  • Pinch sesame seed

  • Sauce
  • 2 tbsp honey
  • 2 tbsp Pearl River Bridge Superior Light Soy Sauce
  • 1 tbsp lime juice
  • 1 tbsp water

  • Green salad or cooked rice, to serve
  1. In small bowl, whisk together honey, Pearl River Bridge Superior Light Soy Sauce, lime juice and water.
  2. Heat oil in pan, cook salmon until each side is golden then transfer to plates.
  3. Add mixed sauce to pan, simmer and stir for 1 min.
  4. Pour glaze over salmon, top with pinch of sesame seed and serve with salad or cooked rice.
