CORN THINS® are not rice cakes. Made from corn, they taste delicious — like popcorn squished into a healthy crispbread. Plus, they’re gluten-free, non-GMO and contain good levels of fibre. You can enjoy them on their own or with your favourite toppings, like we’ve done here.

  • 1 bag CORN THINS slices
  • 1½ cups milk
  • ½ cup packed brown sugar
  • ½ cup egg whites
  • 1 tbsp melted margarine
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • 1½ cups chopped apples


  • Place CORN THINS slices into a food processor and process until roughly a fine consistency.
  • Preheat oven to 175°C.
  • In a mixing bowl, add milk, sugar, egg whites, margarine and cinnamon.
  • In a separate mixing bowl, combine the CORN THINS crumb with the baking powder.
  • Pour the wet mixture into the bowl with the CORN THINS crumb and baking powder and add the apples, then stir to combine.
  • Spoon the mixture into an 8 x 8in pan coated with a light spray of extra virgin olive oil spray.
  • Bake for 30-40 mins until a toothpick comes out clean and the top is firm to touch.
