Ingredients
- 300g peeled large prawns (around 20-25)
- 1 cup buttermilk (or substitute with
- 1 tbsp vinegar into 1 cup milk)
- 1 cup panko breadcrumbs
- ½ cup cornstarch
- 5 tbsp of Good by Grove Avocado Oil, plus extra as needed
- 1⁄3 green cabbage
- 1 spring onion, chopped
- 1⁄3 cup chopped coriander
- Bang Bang Sauce
- 1 cup Thai sweet chilli sauce
- 1½ cups mayonnaise
- 3 tsp Sriracha
- 2 tsp rice vinegar
Method
- In a small bowl, combine all ingredients for the sauce. Mix well and set aside in the fridge
- Soak your prawns in a bowl of buttermilk.
- Place panko breadcrumbs in a second bowl and cornstarch into a third bowl.
- Dredge the prawns in the cornstarch, then into the panko breadcrumbs and set aside on a large plate. Do this to each prawn.
- In a large frying pan or wok, heat avocado oil until hot. Place each prawn into the pan and fry on each side until golden brown. Remove from oil and place on a lined plate with paper towel.
- In a large bowl combine the prawns with three quarters of the bang bang sauce and toss well to combine.
- Pile high on a bed of shredded green cabbage and sprinkle with spring onions and coriander.
- To make this into a larger meal, add noodles, rice or extra veggies.
- Use the remaining sauce for extra dipping sauce — it’s delicious!
