BBQ Elote Corn
Sweet, fresh corn is grilled until it has a hint of char and then slathered in a spicy, creamy, cheesy sauce in this nod to a popular Mexican street food.

Ingredients
- 4 whole corn cobs
 - ½ cup whole egg mayonnaise
 - ½ cup sour cream
 - ¼ tsp cayenne pepper
 - 1 tsp minced garlic
 - 2 tbsp chopped fresh coriander, divided
 - 1 cup freshly grated parmesan, plus 1 tbsp for garnish
 
Method
- Peel the husks back from the corn, gathering them at the base, and strip the silk from inside.
 - Heat your barbecue well and place the corn on it, turning it to cook evenly.
 - You want your corn to start to blacken and char as that is what gives it such amazing flavour. Cooking it for 3 mins per side is a good gauge.
 - Mix the sauce ingredients in a small bowl, keeping 1 tbsp each of coriander and parmesan aside for garnish.
 - Once your corn has cooked, brush it all over with the cheesy sauce and then sprinkle with the remaining coriander and parmesan before serving.
 - Can be served with a squeeze of lime if desired.
