Blueberry Chia Puddings

Ingredients

  • 2 cups almond milk (or any plant-based milk)
  • ½ cup black chia seeds
  • 1 tsp vanilla extract
  • Pinch fine salt
  • 4 tbsp blueberry jam, no added sugar
  • Fresh blueberries, pistachios & coconut flakes

Method


  • Combine the almond milk, chia seeds, vanilla extract and salt in a bowl. Stand for 15 mins, whisking regularly until the pudding thickens slightly.
  • Place a layer of jam on the bottom of each serving jar, then top with the chia pudding.
  • Place in the fridge for at least 4 hrs, preferably overnight. Top with extra jam, fresh blueberries, crushed pistachios and coconut flakes.
