Chicken Roasted with White Wine & Red Grapes

- Size 15 (1.5kg) chicken
- 4 garlic cloves
- 1 lemon, halved
- 1 bunch tarragon, plus extra to serve
- Olive oil
- Sea salt flakes & freshly ground black pepper
- 4 banana shallots
- 200mL white wine
- 300g red grapes
Method
- Preheat oven to 250°C.
- Place the chicken in a roasting tin and stuff it with the garlic, lemon halves and tarragon. Rub the skin with olive oil and season on the inside and out with salt and pepper. Cut the shallots in half and place around the chicken.
- Roast for 15 mins, then pour the wine over the bird. Reduce the temperature to 175°C and cook for another 45 mins, basting the chicken every 15 mins with the liquids from the tin, and adding the grapes around the chicken 20 mins before the end of the cooking time.
- Transfer the chicken to a serving platter and arrange the roasted grapes and some extra fresh tarragon around the chicken to serve.
