Ingredients

  • 1 cup gluten-free plain flour
  • 1/2 lemon wedge, to serve
  • 2 tsp baking powder
  • Honey or maple syrup, to serve
  • 1 tsp cinnamon
  • 1 cup Brancourts Lactose Free Cottage Cheese
  • 3 large eggs
  • 2 tbsp unsweetened plant milk
  • 2 tbsp melted coconut oil
  • 1 tbsp raw honey
  • 1 tsp vanilla bean extract

Method


  • In a large bowl, whisk together flour, baking powder and cinnamon until well combined.
  • In a blender, add Brancourts Lactose Free Cottage Cheese, eggs, plant milk, coconut oil, raw honey and vanilla bean extract. Blend until smooth and creamy.
  • Pour blended mixture into dry ingredients and gently stir until just combined.
  • Heat a skillet over medium heat. Scoop portions of batter into pan, cooking until edges appear dry and bubbles form on the surface.
  • Flip pancakes and cook for another 1-2 mins or until golden brown and cooked through.
  • Stack pancakes to keep them warm. Drizzle with raw honey or maple syrup and serve with favourite toppings.
