Ingredients

  • 6 kipfler potatoes, cubed
  • ¼ cup extra-virgin olive oil
  • 2 tsp sea salt
  • 200g Brancourts 97% Fat Free Cottage Cheese
  • 2 tbsp harissa
  • ½ tsp black pepper
  • Salt, to season
  • 2 garlic cloves, minced
  • ¾ cup parmesan, grated
  • 1⁄3 cup chives, finely sliced

Method


  • Preheat oven to 220°C fan-forced. Line a baking tray with baking paper
  • Bring a large pot of salted water to a boil. Add potatoes and boil for 15 mins or until soft. Drain the potatoes and set aside to cool for 5 mins.
  • Place potatoes in a wide, shallow bowl. Drizzle with olive oil and gently toss. Spread potatoes across the baking tray and season with sea salt. Bake for 40 mins, flipping as needed, until all sides of the potato are crisp and browned. Set aside to cool.
  • In a small bowl, add the cottage cheese, harissa, black pepper and salt. Stir until all ingredients are combined well. Set aside
  • Pour potatoes into a large bowl. Add garlic, parmesan, chives and pepper. Gently stir all ingredients together.
  • Spread the harissa sauce over a large serving plate. Top with crispy potatoes, sprinkling any leftover parmesan seasoning on top. Enjoy!
