- 2 cups kale
- 2 cups shredded green cabbage
- ½ cup diced cucumber
- ½ cup shredded carrots
- ½ cup thinly sliced capsicums
- ¼ cup thinly sliced spring onions
- 1 cup coarsely chopped cashews
- 4 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice-wine vinegar
- ½ lime juice
- 2 tbsp pure maple syrup
- 2 tsp miso paste
- ½ tsp finely grated ginger
Method
- Combine the kale, cabbage, cucumber, carrots, capsicums and spring onions.
- Make the dressing by combining the olive oil, soy sauce, sesame oil, rice-wine vinegar, lime juice and maple syrup.
- Add the miso paste and ginger. Whisk until well combined and there are no clumps. Alternatively, use a blender.
- Shake the dressing when you are ready to serve to combine it again if it has separated. Drizzle about ¾ of it on the salad and toss. Add ¾ cup of the cashews. Add remaining dressing if needed and toss again.
- Garnish with remaining ¼ cup cashews.
