Marinated Capsicums with Anchovies

Ingredients

  • 800g red capsicums
  • 60mL extra-virgin olive oil, for drizzling
  • Sea salt flakes
  • 2 tbsp sherry vinegar
  • 1 tin (48g) anchovies
  • 2 garlic cloves, very finely sliced

Method


  • Preheat oven to 250°C.
  • Toss the capsicums with 30mL olive oil and salt. Place on a baking tray and roast for 20–30 mins or until capsicums are soft and the skin is dark and blistering.
  • Transfer to a bowl, cover with plastic wrap and set aside to sweat and cool. Once they are cool enough to handle, peel off the skins and discard and remove the seeds. Slice into thick strips. Place in a bowl and season with salt, sherry vinegar and the rest of the olive oil.
  • To serve, arrange the capsicum strips on a serving plate and drizzle with some of the dressing. Top with anchovies and sliced garlic.
