Mediterranean Pasta Salad with Creamy Kefir Dressing

Ingredients
- 400g penne pasta (or similar
- 250g cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 2 cups baby spinach
- 1 cup mixed olives, pitted
- ½ cup feta
- ¼ cup roasted red capsicum
- Salt & pepper, to taste
- Handful of crushed almonds or pumpkin seeds (optional)
- Kefir Dressing
- ½ cup kefir
- 3 tbsp extra-virgin olive oil
- 1 tbsp parsley, minced
- 1 clove garlic, minced
- 1 tsp honey (optional)
- Salt and pepper, to taste
Method
- Cook the pasta until al dente. Drain and allow to cool.
- To make the dressing, combine all the ingredients in a sealed jar and shake vigorously until well combined.
- Combine the pasta, tomatoes, cucumber, red onion, spinach, olives, feta and capsicum in a large bowl and season with salt and pepper.
- Drizzle the dressing on the salad and then gently toss all the ingredients together. Serve immediately.
