Mediterranean Pasta Salad with Creamy Kefir Dressing

Ingredients

  • 400g penne pasta (or similar
  • 250g cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 2 cups baby spinach
  • 1 cup mixed olives, pitted
  • ½ cup feta
  • ¼ cup roasted red capsicum
  • Salt & pepper, to taste
  • Handful of crushed almonds or pumpkin seeds (optional)
  • Kefir Dressing
  • ½ cup kefir
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp parsley, minced
  • 1 clove garlic, minced
  • 1 tsp honey (optional)
  • Salt and pepper, to taste

Method


  • Cook the pasta until al dente. Drain and allow to cool.
  • To make the dressing, combine all the ingredients in a sealed jar and shake vigorously until well combined.
  • Combine the pasta, tomatoes, cucumber, red onion, spinach, olives, feta and capsicum in a large bowl and season with salt and pepper.
  • Drizzle the dressing on the salad and then gently toss all the ingredients together. Serve immediately.
