Salmon & Herby Cheese Muffins
A fun twist on bagel and lox, these muffins are a luxe way to start the day. Packed full of healthy fats and big flavours, they make breakfast on the run an experience to remember. Using store-bought low-carb muffins makes this a keto-friendly breakfast as well.

Ingredients
- 4 seedy English muffins, lightly toasted
 - 2 cups rocket leaves
 -  100g cold smoked salmon 
Herby Cheese - ½ cup cream cheese
 - 2 tbsp chopped chives
 - 1 tbsp chopped dill
 - 1 tbsp chopped parsley
 - 2 tsp lemon zest
 
Method
- Place the herby cheese ingredients into a small bowl and beat together until soft and well combined.
 - Layer each muffin by starting with a handful of rocket leaves and top with decadent piles of smoked salmon.
 - Spread a thick layer of herby cheese onto the other half of the muffin and then place it on top to serve.
