Sticky Barbecue Chicken

This sticky and sweet chicken is truly finger-licking good. You can throw this together in the morning and leave it to marinate in the fridge all day. It’s a quick, easy and super-delicious dish to cook on the barbecue.

Ingredients

  • 80mL coconut aminos
  • ¼ cup dark-brown sugar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp minced garlic
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 4 chicken breasts or 8 thighs (I prefer mine skinless)

Method


  • Mix all of the marinade ingredients together in a jug. Reserve ¼ cup.
  • Place your chicken pieces into a large zip-lock bag and pour the remaining marinade over the top.
  • Seal the bag and massage the marinade all over the chicken.
  • Refrigerate for at least 2 hours.
  • When you’re ready to cook, heat your clean barbecue grill to hot.
  • Remove the chicken from the marinade and discard the marinade.
  • Cook the chicken for approx. 5 mins each side, depending on the size of your pieces.
  • Brush the hot chicken with the reserved marinade.
  • Rest before serving.
