Strawberry & Spinach Salad

Ingredients

  • 300g baby spinach or rocket (or combination of both)
  • 450g strawberries, sliced (or combination of mixed berries)
  • ½ red onion, thinly sliced
  • ¾ cup sliced almonds
  • 1 avocado, sliced
  • 100g soft goat’s cheese
  • Balsamic Vinaigrette
  • ½ cup balsamic vinegar
  • ½ cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup (optional)
  • Salt & black pepper, to season

Method


  • Combine the spinach/rocket, berries, onion, almonds and avocado in a large bowl. Toss gently. Crumble the goat’s cheese on top of the salad.
  • To make the vinaigrette, combine all the ingredients in a closed jar. Shake vigorously to combine. Drizzle the vinaigrette over the salad and serve immediately.
