Toasted Muesli Banana Loaf

This recipe is a traditional banana loaf with a Brookfarm twist. Pair their Toasted Muesli with banana for a unique and delicious flavour.

Ingredients

  • ½ cup butter, softened
  • 1 cup light brown sugar
  • 1¾ cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup + 1 tbsp Toasted Muesli Macadamia Cranberry
  • ¼ cup macadamias, chopped
  • 3 bananas, 2 mashed, 1 halved lengthways (for topping)
  • 2 eggs, beaten

Method


  • Preheat oven to 175ºC. Grease and line a loaf pan with baking paper.
  • Cream the butter and sugar in a large bowl with electric beaters.
  • In a separate bowl, sieve the flour, baking powder and salt.
  • Add the creamed butter mixture to the dry mix and combine.
  • Fold in ¾ cup Toasted Muesli Macadamia Cranberry, then add the mashed bananas, eggs and macadamias.
  • Pour the batter into a prepared loaf pan. Top with the sliced banana and remaining muesli.
  • Bake for 45–60 mins until a test skewer comes out clean. Store in an airtight container.
