This works as a quick bite. The brunch with friends version presented here needs a touch more prep and shopping. If you don’t have time to chargrill your breads and sardines, a bit of toast and a quality sardine from a can will still provide all you need.

The combination of sweet mango with fresh mint and lime zest over a lightly spiced salmon fillet is just incredible. Get your pan nice and hot and be ready to enjoy the tender, caramelised flakes of salmon with a cracking salsa.
A Mexican friend taught me this recipe and I love it. It’s just as good with only cucumber if you can’t get your hands on jicama. I’ve added celery too because I love the freshness. In the original recipe my friend used a tablespoon of mayonnaise — you can definitely add that too!
